December on the Farm: Goodale Farms - Egg Nog!
Serves 4–6
6 large egg yolks
½ cup granulated sugar
2 cups whole milk
1 cup heavy cream
½ teaspoon freshly grated nutmeg, plus more for garnish
3 large egg whites
Off the heat, whisk together egg yolks and sugar in a heavy-bottom pot until light and fluffy. Add milk and cream, and bring mixture to a simmer, whisking constantly. Cook, stirring, on medium-low heat until the mixture reaches 140 degrees F on a thermometer. Remove from heat, stir in nutmeg and vanilla and chill thoroughly. When ready to serve, whip egg whites in a stand mixer using the whisk attachment until stiff peaks form. Fold whites into the egg yolk base and serve. Top with freshly grated nutmeg
